Almond brittle cookies

Selamat menyambut Hari Raya Aidilfitri.. hope I’m not too late in posting a cookie recipe for you to try this Raya.  This is almond brittle cookies which is really good.   Double the recipe to fit the standard large tray which is the size of a parchment paper.   Here’s the recipe :

The cookie dough

1 cup/ 225 gm butter
3/4 cup castor sugar 
pinch of salt
1 large egg  
2 teaspoon vanilla extract 
3  1/2 cup cookie flour 

The topping 

1/2 cup of fruit jam
120 gm butter
pinch of salt
1/4 cup of castor sugar
1 tablespoon honey
1/4 cup whipping cream
1 teaspoon vanilla extract 
2 cups of sliced almonds

To make the cookie dough – cream the butter and sugar for about 2 minutes on medium speed.  Add the salt, egg and vanilla.  Beat till all is mix well.  Lower the speed and add flour.  Once all is incorporated, stop mixing.

Put the dough in between 2 parchment papers in your baking tray.  Roll till it covers the size of the tray, thickness about 5 mm.

Prick the dough with a fork.  Put the tray in the fridge for about 30 minutes.

Preheat the oven at 180C.  Bake the dough for 25 minutes.   In the mean time, prepare the topping.  Over medium heat, melt the butter.  Then add salt, sugar and honey.  Stir and once sugar is dissolved, add the whipping cream.  Be careful coz it will bubble and splash.  Cook for about 3 minutes till mixture is thick.  Off the fire, add vanilla and almonds.  Mix thoroughly.

Once cookie is done, take a spoon and layer the jam on the cookie dough.

Then spread the almond onto the jam.  Bake again for about 30 minutes. Rotate the pan halfway and watch carefully not letting the almond burn.   Let the cookie cool before cutting into 1 inch square. ( Place the whole length of knife and press all at once into the cookie to cut it ).

This cookie will surely be a favourite in your family.  The dough is a bit soft and crumbly.  You can also use the dough to make tarts.  If you want a firmer dough with more crunch, maybe you can try and use your own preferred dough and just use the topping recipe with it.

Since this topping has dairy in it, I guess you have to eat the cookie fast.  I’m sure this won’t be a problem.  Selamat berpuasa, Selamat Hari Raya.  Maaf zahir dan batin.
