Oatmeal cookies
I have a packet of dried cranberries in my fridge, don’t know what to do with it until I found this recipe. Its in a book by Cindy Mushet – The Art & Soul of Baking. In the book, the recipe uses dried sour cherries, but I’ve substitute it with dried cranberries.
To make the oatmeal cookies, here’s what you need :
4 ounces of unsalted butter, softened 1/2 cup brown sugar (use slightly less to reduce sweetness)1/4 cup sugar 1 large egg 1 teaspoon vanilla extract 1 cup all purpose flour 1/4 teaspoon baking soda 1/4 teaspoon baking powder 1/4 teaspoon salt 3/4 cup rolled oats (I used instant, and it turn out ok) 3/4 cup dried cherry/ cranberries/ raisin/ any other dried fruits
1/2 cup chocolate chip (optional)
Preheat the oven to 175C or 350F. Line your tray with baking sheet. Mix the butter, brown sugar & granulated sugar just until it is smooth and blended. The key to making cookies is not to over beat the butter and sugar. Around 2 minutes of mixing is enough. Add the egg and vanilla.
In a separate bowl, mix the flour with baking powder & soda and salt ( you don’t have to sieve it) . Add to the butter mixture all at once. Mix at low speed just until all flour is incorporated. Then add the rest of the ingredients – the dried fruit, oat and chocolate chip. ( I will omit the chocolate chip in the future, too sweet for me).
Use an ice-cream scoop or spoon, drop the cookies into the baking tray, separating at least 1 inch apart (or else, you will get cookies that are joint together
) Bake for 15 to 20 minutes. Once done, transfer on cooling racks for them to cool completely.
It is a very easy recipe actually. And I swear, it taste fantastic ! Crispy on the outside and chewy in the inside. This recipe should make about 50 cute cookies, but I only got half the amount. I think I scooped more than a tablespoon, and end up with huge ones. Make yours smaller.
Try it, home-made is best made.

Bel, chewy jugak dlm dia kalau guna instant tu.. lagi pun budak-budak tak akan dapat detect ada oats.. hahaha. Tapi kalau ada rolled oats yg biasa tu, ok gak.

hi Yasmin. never thought of using cranberries in cookies. i love cranberries and hve used them in muffins. will really try ur recipe.
