Mini berry pies

Talking about fruit pies, my favourite would definitely be the classic Apple pie..   the recipe that I’m making today is similar to Apple pie,  only miniature in size and instead of Apples, I’m using Blueberries.  You can use any berries you have in hand.   This pie is quite easy to make.. I love making pies which doesn’t require ‘blind baking’ the shells (too lazy for that), so this small pie is the perfect solution.    OK here comes the recipe :

Pie dough

2 egg yolks
1/4 cup of cold water (or slightly more)
2 1/2 cups of all purpose flour
1 1/2 tablespoon of sugar
pinch of salt
227 gm of cold butter
 

Pie filling

4 cups of berries of your choice
1/2 cup of sugar (or more)
2 tablespoon of cornstarch
pinch of salt
 

To make the pie dough, mix the egg yolk and cold water in a small bowl.   In another big bowl, add the flour, sugar and salt.  I normally grate the butter into the flour mixture, then use my fingers to gently rub it together.  Pour in the liquid and slowly stir.  Just pour enough so you get a soft ball of dough.  Do not over-knead the dough. Cling wrap and leave it to rest in the fridge for at least 30 minutes.  For the filling – just combine everything and stir till the berries are well coated.  Put in the fridge while waiting for the pie dough to cool.

Oil the inside of the pie/ tart pan.  Roll the dough.  The best way is to put a piece of baking sheet on the dough before rolling, to minimize sticking of the dough to the roller.   Cut two round shapes, for bottom and top ( slightly bigger round for the bottom ).  Press gently into the pan, on the base and sides.  Spoon in your filling and then put on the top layer of dough.  Wet the edges with water and pinch to seal the pies.  Decorate as you wish.  Don’t forget to cut a few slits to release the steam.  Now you need to put the pies back into the fridge for about 20 minutes.  This step is crucial to ensure you get a crispy pie.  Don’t miss this step.  Remove the pies from the fridge, egg wash and bake at 180C for about 30 minutes.

As you can see my pie was a mess as I have put too much berries in there.. huhu.. The blueberry mini  pie goes well with some heavy cream, or ice-cream..  or maybe just on its own.   It taste yummy ! Better than using the fillings bought in cans.

I think the concept of Groupon (derived from the word Group Coupon) is great,  both for consumers and also the service provider.  You have to be fast to grab the deals.  And always know what you are buying.
