Creamy corn pudding

This pudding is so easy to make, you don’t need a cake mixer.  Just mix everything by hand and then bake it in the oven.  The Corn Pudding taste so good !  Thanks to the cream cheese in it.  I feel guilty but I’ll just try to concentrate on the fact that I’m eating more whole grain.

The ingredients, enough for 2 to 3 person :


Corn kernel from 4 corns (or frozen) about 200 gm
150 gm soft cream cheese
1/2 cup creamed corn (optional)
1/4 cup milk (full cream or low-fat)
1 tablespoon soft butter
1 large egg
2 tablespoon sugar
1/2 cup of cheddar cheese (optional)
1/2 teaspoon salt

Put everything in a big bowl and mix thoroughly.  Butter a casserole dish and then pour in the pudding.  Bake at 180C for about 45 minutes.  During the last 10 minutes, you might want to increase the top temperature slightly to brown the pudding’s top.  Voila, its ready !  Easy recipe.

If you would like to make a savoury version – add chopped onion, pepper, chili flakes and lessen the sugar.   Till then, happy baking friends.  I’ll catch-up on you in my FB page.  A bientot :)
