Butter cheese cake

This recipe is from Alex Goh Fantastic Cheesecake book, with some minor alteration ( Thank you Chef ).


250 gm butter
200 gm castor sugar
150 gm cream cheese
4 large eggs
80 gm cheddar cheese, grated
50 gm full cream milk
270 gm flour
1 teaspoon baking powder  

Sift the flour and baking powder.  Cream the butter, sugar and cream cheese until light and fluffy, about 5 minutes on medium speed.  Add the eggs one by one, followed by the grated cheddar cheese.  Mix well.  Then add in the flour alternating with the milk.   Grate more cheddar cheese on top of the cake, if you wish.  Bake at 180C for about 50 minutes.  You may sprinkle some nuts about 15 minutes before the cake is done.

Tips :  to avoid your cake cracking all over the top like mine, once the batter is smooth out and ready to be baked, take a knife and run a straight line into the batter.  Just maybe an inch into the cake.  The cake will, hopefully split open in a nice line (I forgot to do this.. hehe ).
