Baked fruit pudding

This is an easy dessert to make, to finish up any fruits or berries in your fridge.  Originally called a Buckle, with a crumb topping.  Yum !  Anybody can make this, choose fruits which are suitable to be baked.

The recipe

170 gm salted butter 
3/4 cup sugar ( I use brown sugar) 
1 teaspoon essence / extract of your choice
3 large eggs
1 cup all purpose flour 
1  1/2 teaspooons baking powder
3 cups of berries / other fruits ( I use strawberries) 

Topping 

50 gm cold butter
1/2 cup sugar
1/2 cup flour 
optional : ground cinnamon, nutmeg, lemon zest,  nuts, raisin.
Serve with – sweetened whipping cream / custard, sauce, ice-cream or whatever suits you :)

Preheat oven at 180C, butter a gratin or baking tin.  Cut the fruits into smaller pieces, not too small or they’ll be mushy when baked.  Mix the flour and baking powder and sift.  Cream the butter and sugar until light and fluffy.  Then add the eggs one by one.  Add the essence.  Once all is incorporated, stir in the flour bit by bit.  Mix till it is just blended.  Add the fruits.  You can turn off the mixer and continue mixing by hand.   Pour the cake batter into the buttered dish.   Now prepare the crumb topping.

Mix all the ingredients and just use a fork or fingers to crumble it.   Leave the butter in pieces or chunk, not too small.  Scatter on top of the cake batter.  Bake for about 1 hour.
