Bread casserole

The other day I bought one big loaf of bread.. and then it was just sitting there, without being eaten.. so before the bread goes really stale,  I decided to turn it into some kind of casserole.   This hotdish I think, would appeal more to the kids.  Bapak-bapak budak, especially yang ‘perut melayu’,  I have a strong feeling they will not really enjoy it ( referring more to my dear hubby.. ).   Its actually a layer of chicken, veggies and bread, soak in a white sauce, and top with cheese.   Doesn’t that sounds delicious ?  It is..  your kids will love it.   If you don’t want to make the white sauce, a short cut is to substitute it with some kind of canned soup.  Maybe those Chicken or Mushroom soup sold in the supermarket.

OK here’s the recipe I used.

Oil and butter for frying
2 or 3 chicken breast, cut into small bites ( I used salami, you could use sausage)
 
1 leek, thinly sliced
1 celery, sliced
150 gm mushroom, sliced
12 pcs of bread, cut into triangles or squares
3 tablespoon of all purpose flour
3 cups of full cream milk, at room temperature
Cheese for sprinkling (use the ones for pizza)
Salt, pepper, oyster sauce, chicken granules.

Ok, first we have to make the chicken layer.  Use a big wok that will hold at least 3 cups of the milk.

Heat one tablespoon of oil and one tablespoon of butter.  Fry the chicken pieces till it is slightly cooked,about 5 minutes.  Then add the leek and celery.  Sauteed till the veggies are a bit soft.   I add about one tablespoon of oyster sauce and maybe 1/2 teaspoon of black pepper to season.   Do not overcook the veggies as they will cook more in the oven.  Remove the chicken and veggies and use the remaining oil to fry the mushrooms.   If you have to, add a little bit more butter.   Once the mushroom is slightly cooked,  push it aside away from the oil/ butter.  Add the flour and stir, around 2 minutes more.  Then add the milk gradually, stirring and mixing it with the mushroom.  The sauce will start to thicken.   Once the consistency is right, season with salt, pepper and a dash of chicken stock granules.  Remove from heat.

To assemble the hot dish,  I scattered the chicken, top with bread, then pour the white sauce onto it.  Repeat till you get 3 layers.  Top with cheese.

Bake at 180 C for 30 to 45 minutes or till the top is nice and golden brown.

The casserole will puff up in the oven, but once taken out, it will sort of shrink.. Let it cool a bit before slicing.   One easy dish to make to feed a house full of kids.  Alter the recipe as you wish :)
