Honey cornflakes

It’s Monday and everyone is back at work, after the one week Raya holiday.   I know the feeling.. you wish the holidays would go on.. must be a a rather sluggish day for most of you.  As for me, I baked another round of Honey Cornflakes today.   Trying to finish up the 1 kg of cornflakes I bought.   I’ve tasted some honey cornflakes served by others, and must admit not all taste good.   Here is my recipe, insyaallah you will like it.  Remember to use good quality butter.

The ingredients :

500 gm cornflakes
250 gm salted butter
90 gm brown sugar
6 tablespoon of honey
4 tablespoon condensed milk
sprinkles for decoration

This is the simplest recipe ever.   So easy to make and all kids (and mothers) love it.

In a large wok, melt the butter.  Then add the sugar, honey and condensed milk.  Stir till the sugar is dissolved and the mixture starts to bubble.  Pour all the cornflakes into the wok and stir to coat evenly.   Remove from heat.  Then, prepare the mini paper cups.    Use a spoon, or better, your fingers.  Fill the papercups with the honey coated cornflakes.  Sprinkle with anything you fancy – coloured sugar, nuts, dry fruits etc.  Bake at 180C for 15 minutes.   Once cooled, store in an airtight container.

If you find the cornflakes mixture beginning to clump together while working, just reheat for a few seconds and stir to loosen them.  A sticky process, but worth it.  Still time to make some, for this Syawal month.  Cheers.
