Mushroom and potato pie

The mushrooms in my fridge are getting old, need to find a recipe to cook them.   I remembered there was one recipe I wanted to try, by Nigel Slater.  Its basically a mashed potato with mushroom filling.  Not very difficult to make, but I was outside watering the plants during the last 10 minutes of baking time, and sort of .. burnt the top.   Anyway,  the original recipe does not contain any meat, I’ve added some beef and lamb to make it a complete comfort food.

The ingredients :
1.5 kg floury potatoes
50 gm butter
100 ml milk/ or half milk, half whipping cream
2 large eggs, beaten
75 gm Parmesan cheese, grated
For the filling
50 gm butter
A little bit of oil
about 6 inch of leeks, sliced
200 gm minced beef or lamb
350 gm brown mushrooms
2 cloves of garlic, minced
2 tablespoon chopped parsley
200 gm melting cheese (fontina/ Gruyere, or just use any cheese you have)
Salt and pepper
Oyster sauce

Method :

Make the mashed potato.  Cut the potatoes in quarters, boil till it is soft.  Peel the skins off, then mashed till there are no lumps.  Add the butter, milk, egg and parmesan cheese.  You can add some salt but not much, as the parmesan is already salty. Mix well and set aside.

Now prepare the filling.  Marinate the minced beef with a tablespoon or two of oyster sauce.  Slice the mushrooms.  Heat the butter and oil, then sauteed the leeks for a few seconds.  Add the beef and stir fry till it is soft, maybe around 5 to 7 minutes.  Add the garlic and mushroom.  Lastly add the parsley.  Season with salt and pepper.  Do not overcook the filling as we are going to bake them.

To assemble, butter a casserole dish.  Smooth half of the mashed potatoes at the bottom.  Top with mushroom, then scatter the cheese.  Lastly cover with another layer of mashed potato.  Dust with some more Parmesan (I forgot to do this..hehe).   Bake at 190C for about 45 minutes.  You might want to use just the top fire for the last 10 minutes to brown the top crust. And watch it carefully..

I love this dish on its own, but I think my hubby will..  in no doubt,  ask for Chili sauce to go with it.  Truly Malaysian :) .

Kalau nak masak pure English / American cooking memang x dapekla …
Everytime masak beef/ chicken base (mat salleh punya cooking kan tawar, salt & pepper je), Liza akan tumis curry powder + tomatoes sket …
Ada sikit pedas, ada sikit masam, ada sikit manis …
Then dorang wouldn’t ask for ketchup/chilli sauce …

Sedap dik, just make sure tak terlebih garam coz cheese dah masin. Budak2 mesti suka :)
