Quiche

I love quiche. The taste is so good, because the filling is made of custard, usually containing eggs, whip cream or cheese. I know I can never get thin eating food like this, but I can’t resist it ! It’s been a while since I made one myself.. so I baked one today. The recipe is from Chef Wan’s book, which I modified a little bit…original recipe is called ‘Quiche Udang Berempah’ (spice prawn quiche).

Pastry :

1 cup cold margerine

4 cups all purpose flour

Cold water – slightly more than 1 glass

Prawn filling :

2 tablespoon butter

1/2 big white onion, diced

1 tablespoon curry powder paste (mix with just a little bit of water)

300 gm of prawn, medium sized (I mix mine with some artificial crab meat)

a little bit of coriander leave, chopped finely

To make prawn filling – heat the butter, stir fry the onions, then add the curry paste. After a while, mix in the prawn. Lastly add the coriander. Do not over cooked the prawns.

Custard :

4 eggs

1 1/2 cup of whip cream

Salt, as desired to ensure the custard is not too blend

sprinkling of black pepper

To make the custard – beat the eggs, add the whip cream, then add salt and pepper. Sieve.

Final assembly :

For the pastry, mix all ingredients together (refer to my posting under ‘simple apple pie’). Let rest in the fridge for at least 30 minutes. Blind baked the pastry – roll the dough to fit in the pan. Poke some holes in the dough and cover with aluminum foil. Fill in some beans, or whatever just to make sure that the dough will keep its shape during baking. Bake in a preheated oven at 180C or 350F for about 20 minutes. Remove the foil and beans.

Put the prawn filling in the prebaked pastry. Pour the custard over it. Arrange some tomato slices on top. Brush the sides of the pastry with the leftover custard for extra shine. Continue baking for another 30 minutes or so. Done.

I think I should have cut off the sides of the pastry more, so that it shows the pan’s nice curve.. it shouldn’t have too much crust. My mistake. Anyway, here’s some pictures I took while baking this.

Don’t the pictures make you feel hungry ? You should try this recipe,ok..the filling can be replaced with anything you like. Maybe chicken with mushroom, hotdog slices, anything which you think goes well with the custard.
