Gum tragacanth, guar gum & arabica gum
So many gum types.. actually I bought all three today, from Eazy Bake in Kota Permai, Penang on the way back to KL. (Thanks to Ten who mentioned this shop to me.) I am quite familiar with gum trag, gum arabic but not so with ‘guar gum’. But since I don’t know when I will ever pass the same way again, I bought all three types.
Gum tragacanth is normally used in gumpaste recipes. Gum arabic as I know it, is use to make edible glue. Just mix 1 part of gum arabic powder with 2 parts of water together, and you can keep this glue in a clear small bottle. Use to glue pieces in making your fondant cakes.
Guar gum - for now this gum will have to seat quietly on my kitchen shelf until I find a good use for it. I read from Baking911.com that it can be added in baking gluten-free breads. I hope I’ll find a recipe for the guar gum before it expires in 2009

Call me pathetic, the purchase of these gums are the highlight of my trip to Penang.

min gum apa yang mahal sampai rm21-50 tu…guar gum ke or tragacanth gum…tak berapa jelas tulisan di plastik tersebut la…min lagi kita berkecimpung dalam bidang kek mengekek ne…lagi memacam yang kita tak tahu dan kena ambil tahu..he he…syiok betui kan?..

Gum Tragacanth tu mesti yg mahal kan…Eh nak tanya u lah, u tau tak, “arabica gum” tu kuta boleh jadi kan edible glitter? (mungkin u dah tau….), mat pun baca melalui buku ” CAKE DECORATING WITH SUGARPASTE” by Sylvis Conward (u ada tak buku nih?)…kat situ ada resipi mcm mana nak buat edible glitter…mat kongsi dgn u yeaa.., mat copypaste je dari buku tu…
EDIBLE GLITTER:-)
50 ML HOT WATER
25 G GUM ARABIC
PROCEDURE
1. POUR WATER INTO A BOWL AND SPRINKLE GUM ARABIC OVER. STAND THE BOWL IN HOT WATER, STIRRING GENTLY TO DISSOLVE.
2. STRAIN MIXTURE THROUGH A PIECE OF NYLON. BRUSH MIXTURE ONTO A CLEAN BAKING TRAY OR GLASS SURFACE AND PLACE IN A WARM OVEN (140C) UNTIL DRY.
3. BRUSH OR SCRAPE THE DRY GLITTER OFF THE TRAY AND CRUSH IN INTO FINE FLAKES. STORE THE GLITTER IN AN AIRTIGHT JAR.
4. GLITTER MAY BE COLORED BY ADDING COLORING TO THE WATER WHEN MIXING….

Mat, thank you Mat for the recipe, tak sabar I nak buat. Nak buat yg kaler-kaler laa.. kita takde buku tu. Useful sungguh la resipi edible glitter ni, mesti ramai yg tak tau.
Val, thanks singgah.. ha’ah aku baru balik from Sg.Petani, ikut Zul outstation. Ni baru habis class sugarpaste tadi.

coz actually i’m from penang n study at kl…
currently having holidayz so i am back to penang…
so…cant buy fondant from you…
moreover i don hav transport n not familiar with the location u’re in…
