Oat & marshmallow cookies

Selamat berpuasa to all my Muslim friends..  now is the time to start testing new cookies recipes.  Well, actually I’ve made oatmeal cookies before, but this recipe is slightly different as it has Marshmallow in it.   The kids will love it.   Ok here’s the recipe :

1/2 cup mini marshmallow
1 cup old-fashion rolled oats
1 1/2 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup brown sugar
3/4 cup butter (170 gm)
1 large egg
1 tablespoon honey
2 teaspoon vanilla extract
1/2 cup dark chocolate chips

Cut the marshmallow into tiny pieces and freeze for at least 1 hour.  Beat the butter and sugar until creamy, about 2 minutes. Add the egg, honey and vanilla extract and beat to combine. In a separate bowl, whisk together the oats, flour, baking soda, baking powder and salt. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in the chocolate chips and frozen marshmallow. Do not overmix.

Refrigerate the dough for at least 2 hours or overnight.  Once done, remove from the fridge and let it soften a bit,  just enough till you can pinch-off about 1 tablespoon.  Preheat oven to 180 C and line baking sheets with parchment paper. Form the dough into small balls and arrange 2 inches apart.   Bake the cookies for about 15 minutes or until light golden brown around the edges but still soft inside.

Store in an airtight container once the cookies are cool.   Enjoy :)

p/s :  Make sure the MM are cut into tiny pieces and frozen.  Or else once baked,  they will melt and leave holes in the cookies.  Use rolled oats for a chewy texture and dont skip the refrigerating part for the dough. The slightly frozen dough will make the cookies crispier.  You must allow 2 inches of space between the cookies as they will expand during baking.  Lastly, use butter and not margarine.
