Prune yogurt cake

*you may halve the recipe to fit into a 8 or 9 inch pan.  The measurement below fits into a standard bundt pan.

1 container of pitted prunes, 340 gm
4 cups all purpose flour
2 teaspoon baking powder
1 teaspoon baking soda
340 gm butter
1  1/2 to 2 cups of sugar
6 large eggs
2 teaspoon vanilla extract
1 cup of natural yogurt

As you can see, its quite easy to make this cake.  Not too many ingredients.  You may add spices if you wish – cinnamon powder, nutmeg, allspice, cloves etc.  But I like it just plain with vanilla.

First, add the baking powder and soda to the flour, sieve.  Place the prunes in a big bowl and pour hot water into it.  Set aside and later on you can chop it into small pieces.   Cream the butter and sugar for about 5 minutes on medium speed.  Add the eggs one by one.  Followed by the vanilla.  After all is mixed well,  add the flour alternating with the yogurt.  Lastly mix in the chopped prunes.

Oil and flour your cake pan.  Pour in the cake batter and bake for about 1 hour at 180C.  Start checking after 40 minutes.  Once baked, make sure you keep the cake covered or wrapped at all times, to ensure it remains moist.
