Frozen food – pizza base

Yesterday I made a batch of pizza base and kept it in our freezer..   before this I used to buy the frozen ones from our local supermarket.   Recently their pizza base was nicely packaged in a box.  But when baked, it didn’t turn out very well, not fluffy and almost hard, even though I had defrosted the pizza base earlier.   Oh well, nothing beats homemade.   The pizza recipe I used is the one in my previous post.   This time I doubled the recipe ( 1 kg of all purpose flour only, I didn’t used bread flour ), and in the end it makes about 4 slightly larger than Regular sized pizza.  Talk about being thrifty.. it is actually very cheap to make it yourself.

Just follow the steps on making the pizza.   I divided the dough into 4 equal portions.  Then flattened them with your oiled palms.   Tried to lambung-lambung.. tapi tak jadi.  hehe, better not.

So, once you have rolled out or flattened the dough,  dust the baking tray with semolina or flour.  Arrange the pizza base nicely on the baking tray.     Preheat oven at 250C.   Bake them for 6 minutes.   Yes, 6 minutes only, partially baked as the mission is to make frozen pizza base, right ?  Remember to set your hp timer or else you risk overbaking it.

Once baked, remove from the oven and let it cool.   If you wish to eat the pizza immediately,  add the pizza sauce and toppings and continue baking for about 15 minutes more or till the cheese has melted.   If to be eaten later, once cooled wrap the pizza in several layers of cling wrap, and lastly aluminium foil.   Keep in the freezer, and defrost before using.

You can also freeze the divided dough.. but I find it is better to freeze the partially baked base.  This way you can have pizza any time, faster.

For the sauce, I’m planning to make this recipe from the book “Cooking Italian with the Cake Boss”.  Love Buddy.. Here it is :

1 can whole peeled tomatoes, drained
2 tablespoon extra-virgin olive oil
2 large garlic cloves, minced
2 tablespoon grated Parmesan cheese
1 tablespoon of sugar
Salt
 
Minced the tomatoes in the blender and add the rest of the ingredients, and its ready.  The sauce is not cooked.. Can be kept in the fridge for up to a week.
