Simple ‘Macaroni and cheese’
Macaroni and Cheese is an easy dish to prepare and sometimes during parties, I make a big portion like the one below. The kids loved it and one packet of pasta surely feeds a lot.
The flavour is mild to cater for the children’s taste bud. Here’s the recipe if you would like to try and make some.
5 slices of sausage (any type) oil for frying 1 packet (500 gm) macaroni water and salt White sauce 4 tablespoon of butter 1/3 cup of all purpose flour 4 cups of milk, warm 2 cups of extra sharp cheddar cheese, grated 6 slices of processed cheese (any type) 1/4 cup parmesan cheese salt, white pepper and chicken broth cube to sprinkle - 3/4 cup bread crumbs, rub with some butter more grated cheese and Parmesan cheeseFirst, slice the sausage and fry them in the oil. Remove and set aside. Boil the macaroni in salted water till it is al dente. Drain and set aside.
To prepare the Mac n Cheese, first we need to make the white sauce/ roux. Melt the butter over medium heat. Add the flour. Then gradually add the milk. Keep stirring until the sauce thickens, for about 5 minutes (the sauce should not turn too dark). Stir in all the cheeses and whisk until they melt. Season with salt, pepper and chicken cube.
The traditional way of assembling the dish, is by making a layer of the cooked pasta as the base, followed by the white sauce and sprinkling of more parmesan and grated cheddar cheese. Repeat the layers and top with breadcrumbs and more cheese.
What I’d like to do is mix everything first, I use a big Kuali (wok). Mix the fried sausage, pasta and white sauce. Adjust the seasoning if necessary. Pour into the casserole dish and then top with the breadcrumbs. Bake for about 30 to 40 minutes at 180C. You can actually bake the dish closer to the time of event, so it is nice and warm when served. Which makes it truly a ‘comfort food’. Enjoy the meal
