Pear and almond cake

I always end up having too many apples or pears in the fridge.  Bought them with the intention of trying to eat more fruits everyday.  But finally, not eating them.  I really love tropical fruits, apples and pears, not so much.  So the only option left is to use the fruits in cakes.  For this cake, I’m using pears but you could also substitute with apples or other fruits you think is suitable.   The cake has a nutty flavor due to the almonds in it.  We have it with lots of cream sweetened with some icing sugar.

 

The ingredients :
 
150 gm butter
3/4 cup of castor sugar
4 large eggs
2 teaspoon Almond extract
3/4 cup of ground almond
1 cup of self-raising flour, sieve
4 medium sized pears, 3 tablespoon of butter and 2 tablespoon sugar

10 inch Cake pan, or 8 inch if you want a taller cake.

Ground almond

You need to prepare two things : the cake batter and the pears.  For the cake batter, cream butter and sugar till white and fluffy, for about 5 to 7 minutes.  Add the eggs one by one.  Then the almond extract.  Lastly, lower the speed and add the ground almond and flour.  Mix till all is incorporated.  Do not overmix.

Spread the batter evenly in the cake tin and then prepare the pears.

Peel, core and cut each pear into 8 sections.  Saute in the pan with some butter and sugar till the pear turns soft.

Arrange the pear slices onto the cake.  It doesn’t really matter what pattern you make as the pears are going to sink into the cake anyway.  Pour the extra juices from sauteing  the pears onto the cake batter.  Bake at 180 C for about 45 minutes or so.

Its really nice to have this cake for afternoon tea,  serve it with cream or custard.   Not too sweet and overall, taste good.

Looks great! sometimes I have plenty of fruits in the fridge but I don’t have idea on how to make those fruits become different. Now, you give me idea on how to combine them and make a recipe for a cake. Thanks a lot for sharing your recipe. Soon i will try it for my family.

Min, I’ll try this out as I’ve always need to finish my factory subsidy RM3 for fruits and normally I bought pear, banana and red dragon…seldom oranges.
