CADS is an acronym for “Cerebral Palsy, Autism-ADHD, Down Syndrome-Dyslexia and Slow Learners.” Today me and Chef Gunawan was at CADS Enhancement Centre in Jalan Duta to conduct our first baking session with the kids. Due to their special needs, we used Gluten-free flour to make the Carrot and Blueberry muffins. I had never baked with Gluten-free flour before, but after tasting the muffins, I can say that there is not much difference in the taste.
We would like to thank Pn. Azura, the principal for giving us the chance to work with them. Our challenge is to teach these children to eat healthier, by incorporating fruits and vegetables in their diet and avoiding ingredients which will worsen their symptoms. We were glad to see the children enjoying their muffins today and hopefully every week we will be able to teach them more interesting recipes. My thanks also goes to Chef Gunawan, who is willing to help me with this bit of charity project. His previous working experience in Prince Court Medical Centre has proved to be very useful.
If you have a special needs child, CADS is planning to conduct similar workshops in the future which will be opened to the public. We will keep you posted on this. Take care and happy baking

Free recipe : Mexican bun The theory of the bread-making process will be explained to the students. Students will learn how to make the breads from scratch. Each will get the chance to knead and shape the breads We will be making : 1.Baguette (poolish method) 2. A multipurpose dough which will be turned into sandwich loaf, soft bun & hotdog bun 3. Please share/ tag your friends. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 1 1/4 cup salted butter or 280 gm Grated zest from one orange 1 cup castor sugar 1 teaspoon orange emulco 1 teaspoon lemon paste 5 large eggs 2 1/4 cup all purpose flour 1/2 teaspoon baking powder 1/2 cup orange juice (from about 2 oranges) 1/4 cup sour cream / yogurt 1 cup raisin/ sultana/ currant First soak the raisin in hot water. After the raisins are plump, remove the water, wipe dry and toss in some flour to coat it. Combine the flour and baking powder, sift. Put the orange juice and sour cream in a small bowl and stir together To make the cake, cream the butter, sugar and the orange zest for about 6 minutes on medium speed. Then add the orange emulco and lemon paste. Once all is mixed well, break the eggs one by one. Next, reduce the speed of your mixer. Add the flour, alternating with the juice. Do not over mix. Lastly, throw in the raisin Bake at 160 C for about 1 hour and 15 minutes The cake won’t rise very much as the baking powder used is very little.
