Chocolate Fruit Cake
Hari Raya is just a few days away ! I’ve just baked this very rich and moist Chocolate Fruit cake, to giveaway for family to enjoy on Raya day. If you want a traditional Fruit cake (not chocolate), please read my previous post here. Follow the same technique for lining the cake tin.
The Chocolate Fruit cake recipe comes from Nigella Lawson (thank you) , you can get the original recipe from this website. After trying this recipe, I find it to be too sweet with too much fruits, so I’ve tweaked it a bit to suit our Asian taste. Here’s my amended version, hope you’ll try it. Make extras and freeze.
CHOCOLATE FRUIT CAKE
250 gm dried soft prunes, chopped
100 gm raisins
50 gm currants (or substitute with total 150gm of mix fruits)
175 gm unsalted butter, softened
130 gm dark muscovado sugar (or brown sugar)
175 ml honey
125 ml coffee liqueur (substitute with chocolate extract + instant coffee)
Orange juice, half glass (or substitute with Sunquick)
1 teaspoon mixed spice (or less)
4 tablespoons cocoa powder
3 eggs, beaten
150 gm plain flour
75 gm ground almonds
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Method
Preheat the oven to 170C.
Place the fruit, butter, sugar, honey, coffee liqueur, orange juice, mixed spice and cocoa into a big pan. Heat until it reaches a gentle boil, stirring the mixture until the butter melts. Remove from heat and leave to stand for 30 minutes or until mixture is cool. Add the eggs, flour, ground almonds, baking powder and baking soda into the pan. Mix well with a wooden spoon until the ingredients have combined. (You don’t have to use a mixer for this recipe, pakai tangan pun boleh..) . The mixture will be runny and quite soft.
Pour the fruitcake mixture into a 8 inch lined cake tin. Bake for about 1 to 1.5hour, or until the cake tester inserted in the middle of the cake comes out clean. I have quadruple ( x4) the recipe and it yields enough batter for 4 units of 7 inch diameter round cake tin, perfect size for gift.
