Last Saturday we celebrated my daughter’s 11 year old birthday.   Invited a few of her friends and the rest who came were our very close relatives.   The menu was simple – baked macaroni , roast Cajun chicken and pizza.  It was a fun day making our own pizza.  I prepared the dough at about 2 pm and the party started at about 4.  So by the time our guest arrive, the pizza was ready to be baked.

Here’s the recipe to make the pizza dough.

Makes about 8 small pizzas:

250 gm bread flour/ high protein flour
250gm all purpose flour
5 gm powdered yeast
10 gm salt
325ml water (or slightly more)
1 tablespoon vegetable oil
optional – 5 gm bread improver
For dusting – optional – polenta/maize meal /other coarse flour

Method – to make the dough using a mixer – put everything in, with the dough hook,  knead for about 10 minutes until the dough is elastic and smooth.  Use a low speed ya.  Oil a big container, shape the dough into a ball and let it rest in the container.   Loosely cover with a plastic or kitchen towel and let it rise to double its size.  I usually use my stainless steel mixer bowl and place the bowl close to my fridge to get the heat.   This way the dough will rise faster.

For the pizza party, you can arrange all sorts of toppings in bowls and the guest can then make their own version of pizzas.  Pinch out a small ball of the risen dough, roll to about 5 mm thickness or less.  Spread on the pizza sauce, sprinkle the toppings and into the oven, for approximately 15 to 20 minutes.  Bake at 250C.

What better way to eat a pizza other than hot from the oven !  All our guest had their own favorite toppings.  As expected, no mushroom or onions where chosen by the kids..

The latecomers had to wait in line for their pizzas to be ready (btw,  I had to bake twice for this boy !)

Surprisingly, my pizzas were sold out even tho I think it tasted a bit ‘healthy’ (used whole- meal organic flour).

Success !  By the end of the day, we were all stuffed..    have to do this again someday :)
