Mini cakes
Mini cakes are making a comeback these days. In Malaysia, I seldom see any shops selling the mini cake pans. I’ve seen some sold when I was teaching in C Siang, Johor Bahru. But in KL, I’m not so sure where to get them. I bought mine online, from Surbiton Sugarcraft. Mine looks like this :
Each is 2.5 inch in diameter, total 16 rings. I like having this cute multi-mini round cake pan set. I was told that we can also make mini cakes by cutting a big cake, and then sculpting them into smaller sizes. Don’t think I have the time and patience to do that.
Anyway, today I tried a new recipe. It’s called 1-2-3-4 cake (seriously !)
The ingredients : 1 cup of butter 2 cups of sugar ( I use 1 3/4 cups only)3 cups of all purpose flour or cake flour
4 large eggs 1 tablespoon baking powder 1 teaspoon baking soda 1 1/4 cups buttermilk ( I substitute with 1 1/4 milk + 2 tablespoon lemon) 1 1/2 teaspoon vanilla extract Method :
Preheat oven to 350 F. Butter and flour the mini cake pan set. Sift the flour with the baking powder and soda. Cream the butter and sugar until very light. Beat in the eggs, one at a time. Then mix in the vanilla extract. Lastly, beat in the flour alternating with the buttermilk, beginning and ending with the flour.
I use an ice-cream scoop, the medium size, not too small or big. I put 2 scoops of the batter in each mini pan. Or just fill them up halfway. I end up getting 15 mini cakes. Don’t be tempted to fill more than needed, otherwise the batter will rise and spill out of the pan (an ugly sight.. ) Anyway, the ready mini cake should look like the one below.
The recipe turns out delicious, the texture of the cake is not too soft making it suitable to be covered with fondant. The mini cake is really small, actually. Slightly bigger than a muffin. I had fun decorating each of them..

Nina seafrost here! Been eyeing this mini pan since last year, plus yang other shapes too, geram sangat esp pan square yg boleh adjust size tu…btw, hope you can inform me here or email me personally at seafrost8@yahoo.com on how much the pan & shipment cost in RM…kena buat calculation earlier ni, esp since the pan is heavy (ye ke?). And yeah, Surbiton are one of my fav online shops

Actually not sure if you know this…..the actual name for the mini cakes french call it “petite four”. Petite is small and four means oven.
Anyway i’ve learned to do in my advance course…. a little tedious on the poured fondant but….. ok i guess.
